Home cook Mary Shivers, Ada, Okla., was named runner-up out of more than 1,000 entries in the Heirloom Recipe Contest, hosted by Just a Pinch Recipe Club, the digital recipe and coupon social network for home cooks at www.justapinch.com.
Shivers’ recipe, Almond-Laced Banana Cake, scented with almonds three ways – is a perfect flavor complement to a creamy banana cake.
Chosen for its taste and ease of preparation, Shivers’ recipe was also chosen for the family story that goes with it.
“Growing up, anytime we had bananas that would get brown spots, Mom would always use them to make her famous cake, usually for Sunday lunch for our very large family. What I didn’t realize was that Mom utilized everything she could, rarely throwing things away if she could help it. Since we didn’t like ‘ripe’ bananas, this cake was a regular around our house! I love this version I created using almond in three different ways to enhance the bananas; it is great to serve as a dessert but also works well for brunch or even breakfast.”
